New diabetic recipes, mashed chickpeas

 Hummus (mashed chickpeas)

 Preparation time : 30 minutesCooking time : 120 minutes
 
Ingredients ( 6/8 ) :

    
- 500 g chickpeas
    
- 3 cloves of garlic
    
- 1 bay leaf
    
- 2 lemons
    
- Very fruity olive oil or sesame oil
    
- paprika
    
- Chilli powder
    
- Black olives
Preparation of the recipe:The night before, soak the chickpeas in cold water .
Put
the bay leaf and 1 clove garlic in 2 liters of cold water, boil and cook for 1 hour 30 minutes to 2 hours.Add Salt and pepper halfway .
Drain the chickpeas, keep the cooking water .
blend the chickpeas , put in a saucepan and heat gently .Incorporate 10 cl of warm oil while whipping, add in a little cooking juice and lemon juice .
Crush the garlic in a mortar with 2 tablespoons of oil , add it to the saucepan off the heat, sprinkle 1 pinch of pepper .
Serve sprinkled with paprika, garnished with black olives and accompanied by lemon quarters.Not to mention the toast or Lebanese bread !

And another great recipe for everybody^^

Sliced ​​fennel with tuna

Preparation time: 20 minutes

Ingredients (6 persons):

     - 5 fennel bulbs
     - 600 g of tuna in oil
     - 150 g of olives
     - 4-5 tablespoons of lemon juice
     - 9 tablespoons olive oil
     - Chopped chives and onions (or spring onions)
     - Salt and pepper


Preparation of the recipe:

Finely chop the fennel and mix in flaked tuna and olives.


Emulsify the oil with vinegar, salt, pepper and chives.


Sprinkle the salad with the vinaigrette and let marinate for 15 minutes before serving.

recipes for diabetics and others too^^

Recipes suitable for diabeticsDiabetes is a disease that requires a specific and restrictive diet . It needs heavy discipline in food choices and sometimes hinders the culinary imagination as diabetic recipes always seem unsavory orhard to execute.Thus, I selected 6 recipes that have been adapted for people with diabetes so that you can continue to enjoy your favorite recipes (which does not have changed that much , do not worry !) .But before we get into the nitty-gritty , here are some essential knowledge to eat better with diabetes tips :- Eat legumes who have a low glycemic index and are high in fiber (lentils,red beans, peas , chickpeas ...) . 
- Add oats or wheat in your preparations. 
- Try new foods (quinoa, bulgur , Jerusalem artichokes , sweet potatoes ...) .
 - Make soup a complete meal by adding red beans , whole pasta, fish or chicken . 
- Season without fat : orange juice , lemon juice , mustard, vinegar , white cheese 0% , stirred yoghurt , tomato sauce , garlic, basil , parmesan , parsley, shallot ...

Tomato and avocadot tartare

Preparation time: 40 minutes

Ingredients (4 personnes):

     - 6 round tomatoes
     - 2 avocados
     - Some pine
     - 1 onion
     - Parmesan
     - Pesto Sauce
     - Olive oil
     - Balsamic vinegar
     - Half lemon


Preparation of the recipe:

Cut 2 avocados into small cubes and mix them with lemon juice.

Scald the tomatoes, peel and cut into small cubes. Put the cubes tomatoes away in a strainer, sprinkle with salt and let drain for 15 min.

Mix the avocado cubes, tomatoes, pine nuts and onion in a bowl. Season with 3 tablespoons of olive oil and 1 tablespoon of vinegar.
Divide among 4 glasses or ramekins and refrigerate.

When ready to serve, unmold on the plates, garnish with parmesan and a drizzle of pesto sauce and voila!!!
